Swamp Angel Cheese Twists

3 cups all purpose flour
1 tsp. salt
1 tsp. cayenne
2 sticks butter (use BUTTER)cut into small pieces
1/2 lb. FRESHLY GRATED Parmesan cheese
1/2 lb. sharp cheddar cheeseRecipe
In a large mixing bowl, SIFT together the flour, salt and cayenne, then add butter and work mixture with fingertips until it resembles course meal. Add the two cheeses and work until mixture is not longer crumbly. Put in refrigerator for about 15 minutes to cool. It's easier to work with that way.
Preheat oven to 350.
On lightly floured surface, roll out dough and cut into strips about one quarter inch wide and 2 inches long. Place strips on large ungreased baking sheet (I twist mine in the middle)and bake until LIGHTLY browned, about 18-20 minutes.
Transfer to large plate and repeat until out of dough.
Put your dough back in the refrigerator between batches.)
You can also cut in small rounds topping with half of a pecan or a slice of stuffed green olive.
Store in air tight container.
