Recipe Introduction
This renaissance president was a native of Virginia and had a special fondness for such Southern foods as deviled crab. Jefferson loved wine and entertaining. At the end of his first year in the White House, his entertainment expenses were over $12,000--more than the presidential income. Of course, because he was an impeccable president, it was paid for out of his personal funds.
If you do not live near a good source for fresh crab, frozen may be substituted. A glass of cool dry white wine served with this delicious dish adds a nice touch.
List of Ingredients
1 pound fresh crab meat (imitation crab may be used)
1/4 cup butter
1 medium red pepper, chopped
4 green onions, minced
1 tablespoon flour
2 cups half-and-half
1/4 teaspoon cayenne
1 tablespoon dijon-style mustard
2 tablespoons brandy or white wine
1/4 cup bread crumbs
Minced parsley for garnish
Recipe
Melt the butter in a heavy saucepan. Add the pepper and onion. Fry over a low flame just until limp. Add the flour to the pan and blend well. Next, add the half-and-half, cayenne, and mustard. Stir over low flame until the mixture is slightly thick. Add liquor and crab meat.
Place in a buttered baking dish or 4 individual dishes or baking shells. Sprinkle the bread crumbs on top and bake at 350° for 20 minutes. Garnish with minced parsley.
