10-ounce bag washed baby spinach
10 ounces (1 1/4 cups) grated mozzarella cheese, plus extra for topping
10 ounces (1 1/4 cups) grated Monterey Jack cheese
6 tablespoons grated Parmesan cheese
3/4 cup sour cream
3/4 cup mayonnaise
6 tablespoons half-and-half
4-ounce can diced green chili peppers, drained
1 to 2 tablespoons granulated garlic
1 teaspoon salt

Heat oven to 350 degrees. Lightly grease a 9-by-13-inch baking dish. Set aside.
Put spinach in food processor; pulse several times (do not purée). Wrap spinach in paper towels and squeeze to remove as much water as possible. Combine with all remaining ingredients except tortilla chips. Stir to mix well. Place in baking dish and bake 30 to 45 minutes.
Remove from oven and stir thoroughly. Top with extra Mozzarella, to your taste. Serve with tortilla chips.
Serves about 12.
