    YUMMY CHICKEN AND LEEK ROLL

    # 1 oz butter 3 leeks sliced
    # 4 oz button mushrooms sliced
    # 2 boneless chicken breast fillets, sliced
    # 3 oz sour cream
    # 1 table spoon snipped fresh chives
    # fresh ground black pepper
    # 12 sheets filo pastry
    # 2 tablespoons olive oil
    # 1 tablespoon poppy seeds

    Recipe



    1. Melt butter in a frying pan over a medium heat, add leeks and cook striring for 4 minutes or until leeks are golden. Add mushrooms and cook for 2 minutes longer or until mushrooms are soft. Remove from pan and set aside to cool.
    2. Add chicken to pan and cook, stirring for 5 minutes or until chicken is just cooked. Remove chicken from pan and set aside to cool.
    3. Place leek mixtue, chicken, sour cream, chives and black pepper to taste in a bowl and mix to combine.
    4. Brush each pastry sheet with oil and layer. Spread filling over pastry leaving a 2 cm in boarder. Fold in sides and roll up like a Swiss roll. Place roll on a baking tray, brush with oil and sprinkle with poppy seeds. Bake for 20 minutes or until pastry is crisp and golden. Oven temperature 200oC. 400oF When fresh leeks are not available, a combination of spring onions and garlic can be used. Natural low-fat yogurt can be substituted for sour cream, t make a low-fat version of this recipe.
