List of Ingredients




1 cup self rising flour
2 cups self rising cornmeal
3 tablespoons sugar
1/2 tablespoons baking powder
4 tablespoons oil 2 eggs, beaten
1large onion, finely chopped
1 jalapeno pepper, finely chopped or ground in food processor
1cup buttermilk

Recipe



Combine flour, cornmeal, sugar and baking powder in a large bowl and mix well. Combine oil, eggs, onion, pepper and buttermilk, stirring well. Add to dry mixture and mix well. Batter will be stiff. Use 2 tablespoons of batter (or an ice cream scoop) to form each hush puppy. Drop into hot oil (350*) and fry approximately 4 minutes or until brown.

Yield: 20-25 hush puppies
