1-1/2 cups all-purpose flour
1 tsp. dried crushed red pepper
1/2 tsp. garlic powder
1/2 tsp. chili powder
2/3 cup butter, cut up
1-1/2 cups (6-ozs.) finely shredded Colby Jack cheese
2 tbsp. cold water
Recipe
COMBINE first 4 ingredients in a bowl; cut in butter with a pastry
blender until mixture is crumbly. Stir in cheese. Sprinkle cold water, 1
tbsp. at a time, evenly over surface; stir with a fork until dry
ingredients are moistened. Shape dough into a ball; cover and chill 1
hour.
DIVIDE dough in half; store 1 portion in refrigerator. Roll remaining
half of dough to 1/4-in. thickness on a lightly floured surface. Cut
with a 5-in. cowboy boot cookie cutter; carefully transfer to ungreased
baking sheets.
BAKE at 400ºF. for 12 minutes or until lightly browned. Let cool 1
minute on baking sheets. Carefully remove to wire racks to cool. Repeat
with remaining dough.
Yield: about 1 dozen.
