    1 teaspoon butter
    6 ounces Canadian bacon slices -- chopped
    2 1/3 cups all-purpose baking mix
    3/4 cup shredded Cheddar cheese -- divided
    1/2 cup shredded Swiss cheese
    2 tablespoons chopped fresh parsley
    1 cup milk
    1/3 cup mayonnaise
    1 large egg -- lightly beaten

    Recipe



    Melt butter in a large nonstick skillet over medium-high heat. Add bacon; cook 5 minutes or until browned. Set aside.

    Combine baking mix, 1/2 cup Cheddar cheese, Swiss cheese, and parsley in a large bowl; make a well in center of mixture. Add milk, mayonnaise, and egg, stirring just until dry ingredients are moistened. Stir in bacon. Spoon into lightly greased muffin pans, filling two-thirds full. Sprinkle with remaining 1/4 cup Cheddar cheese.

    Bake at 400 degrees F for 20 minutes or until edges are lightly browned. Remove from pan, and serve warm.
