Golden Potato Biscuits

List of Ingredients
4 slices of prosciutto or bacon, cut into small pieces
1 cup all purpose flour
2 tsp. baking powder
1/2tsp. salt
4 Tbsp. unsalted butter, cut into cubes
1/2c. cooked mashed potatoes
2 0z. Parmesan cheese, cut into tiny cubes
1 tsp. dried oregano
about 2 Tbsp. milk
1 egg yolk, to glaze Recipe
Heat a skillet without oil and dry fry the prosciutto or bacon for 5-6 mins, or until crispy. Remove with a slotted spoon and drain on paper towels.
Sift the flour,baking powder and salt into a large bowl. Add the butter and rub in using your fingertips until the mixture resembles bread crumbs.
Add the potatoes, Parmesan, oregano and cooked prosciutto and mix well. Add enough milk to form a soft but firm dough. Turn onto a lightly floured surface and knead briefly.Roll out the dough to 1/2inch thick, then stamp out rounds using a cutter. Reroll any trimmings and cut out more rounds to make 10 biscuits in total.
Put the biscuits on a well greased cookie sheet and brush the tops with the egg yolk.
Bake at 425 deg. for 10-15 minutes, or until golden brown and well risen.
Serve warm.
