Henny Penny Muffins

Who knows why these are named after the silly chicken who thought the sky was falling, or Chicken Little's friend, depending on which version you read, but these savory muffins, from "The Laura Ingalls Wilder Country Cookbook," are a great way to use up that last little bit of turkey. Makes 36 mini-muffins.
List of Ingredients
2 tablespoons chopped celery
2 tablespoons chopped onion
4 tablespoons butter, melted
2 cups flour
1/2 teaspoon salt
4 teaspoons baking powder
1 teaspoon thyme, sage or a mixture of both
2 eggs, beaten
1 cup milk
1 turkey wing, skin removed and diced small, to make 1 cupRecipe
Preheat oven to 425. Grease 36 mini-muffin cups or line with paper.
Sauté celery and onion in butter until soft. Sift dry ingredients together in mixing bowl. Sprinkle with thyme or sage. Combine eggs, milk, turkey and celery mixture. Add all at once to dry ingredients and stir until just combined.
Spoon into muffin tins and bake 12-15 minutes until golden brown.
