    * 2-1/4 cups of warm water
    * 2 packages active dry yeast
    * 3 tablespoons sugar
    * 3 teaspoons salt
    * 5-3/4 cups all-purpose flour
    * Big pot with water

    Recipe



    Combine 1/4 of cup of water with yeast and let stand for 10 minutes. In a large bowl mix the rest of the water, sugar and salt and mix in 4 cups of the flour. Mix at regular speed for 5-7 minutes. With a spoon, mix in 1 � cups more of flour to make a stiff dough. Place dough on a clean floured countertop and knead until the dough is smooth and elastic, about 15 minutes. Add flour as needed until you have firmer dough.

    Place dough in a greased container, cover, and let it rest in a warm place until it doubles its size (1 to 2 hours).

    Knead dough again gently and divide into approximately 12 pieces of the same size. Shape into bagels and place all pieces on a lightly floured board. Cover them with a soft clean cloth and let them stand in a warm place for another 20 minutes.

    Bring the pot of water to a boil and keep it boiling gently. Drop one bagel at a time into the water and boil for about 5 minutes (turn bagels constantly). Remove from the water, drain gently on a paper towel then put on a lightly greased baking sheet. This is the moment to sprinkle with your favourite ingredient (sesame seeds, poppy seeds, etc.) Bake for about 35 to 40 minutes in a preheated oven at 200 degrees Celsius. Bagels will turn brown. Cool on top of a rack. Enjoy.
