1/3 cup butter or margarine, softened
1/2 cup sugar
1 egg
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon nutmeg
1/2 cup milk
TOPPING:
1/2 cup butter, melted
1/2 cup sugar
1 teaspoon cinnamon
Recipe
Preheat oven to 350 degrees. Spray with a nonstick cooking spray 12 cup muffin or 24 small muffin tin. Cream butter with sugar until light and fluffy. Add egg. On seperate plate mix flour, baking powder, salt and nutmeg. Add half of flour mixture and half of milk to sugar mixture; repeat and mix until blended. Fill muffin cups 2/3 full. Bake in oven; for small muffins, bake 10-12 minutes and larger ones for 20 to 20 minutes. Muffins will be pale in color when done, may turn brown around edges. Have butter melted and in a bowl; blend sugar and cinnamon in another bowl. Immediately roll muffin in butter then in sugar mixture.
Great Muffin for a brunch as you do not have to worry about serving butter
