Rebel Cheese House Pennies

Recipe Introduction
Yields: 4- 6 servings
List of Ingredients
1lb medium yellow cheddar, shredded
1/2lb butter, softened
1 t salt
1/2 t cayenne pepper
2 all purpose flour
3 C cooked spinach, drained
and moisture squeezed out Recipe
Combine cheese and butter and let sit at room temperature until pliable
Sift together flour and spices
Mix cheese and butter together with hands until finally blended
Add flour into cheese and mix well
Divide into 1/2 lb balls
On strips of wax paper, spread or roll mixture in to a flat “log”
Spread some spinach in the center of each and roll into 1” logs using wax paper. Wrap each log in its wax paper and twist ends.
Store in fridge and freezer
To cook; Unwrap and slice into 1/2” disks, place on a greased pre-heated cookie sheet and bake at 400° until bottoms brown, flip and brown other side.
