    ARIZONA DESERT GRILLED STEAK

    1 2-pound Top Sirloin Steak, about 1-1/2-in. thick
    1 1/2 cups Dry Red Wine
    1/4 cup grated Onions
    3 cloves Garlic, minced
    1 teaspoon Thyme
    1 teaspoon Cumin
    1/2 teaspoon Pepper
    1/2 teaspoon Red Pepper flakes
    1/2 cup Vegetable oil
    1 tablespoon all-purpose flour
    1 tablespoon cold water
    1 teaspoon Instant Beef Bouillon
    Kosher salt and fresh ground pepper
    8 Whole fresh sliced Mushrooms (optional)

    Place steak in 13x9x2 glass baking dish.

    In a blender or food processor, combine next 9 ingredients; pulse until smooth. Pour marinade over steak; turn to coat well; cover and refrigerate 24 hours, turning occasionally.

    Prepare grill; bring steak to room temperature. Remove steak from marinade; season with salt and pepper to taste and set aside.

    Measure 3/4 cup marinade into small saucepan; discard remaining marinade.

    In a cup, whisk water and flour until well-mixed. Whisk mixture into the marinade, add bouillon and mix well. Cook and stir over medium heat until slightly reduced and thickened. Heat mushrooms in sauce, if used.

    Grill steak over medium coals 4-5 minute each side or until desired doneness. Let meat rest about 10 minutes before slicing.

    To serve, carve steak in 1/2- slices; drizzle some sauce over steak, and serve remaining sauce separately.

    Serves 4.
