    JAIMITO'S SPICE RUB:
    * 3 tablespoons kosher salt
    * 3 tablespoons paprika
    * 2 1/2 tablespoons chili powder
    * 2 tablespoons jerk seasoning
    * 2 tablespoons brown sugar
    * 1 tablespoon lemon pepper
    * 1 tablespoon granulated garlic
    * 1 tablespoon ground cumin
    * 1 tablespoon Cajun seasoning

    * RIBS:
    * 2 racks baby back pork ribs
    * Barbecue sauce (your favorite), optional

    Recipe



    For Jaimito's Spice Rub: In a bowl, combine kosher salt,
    paprika, chili powder, jerk seasoning, brown sugar, lemon pepper,
    granulated garlic, ground cumin and Cajun seasoning.

    Rub can be made up ahead of time and stored in a glass jar.

    Makes about 1 1/4 cups.

    For Ribs: Massage the rub onto both sides of the ribs. Leave
    them uncovered and place in the refrigerator over night.

    Prepare a smoker by placing 10 charcoal briquettes on one side
    of your grill. Wet a couple of handfuls of wood chips, place on top
    of the charcoal, and light the fire. The chips will begin to smolder.
    Place the ribs on the opposite side of the grill, close the cover,
    and "cold smoke" them for 2 hours.

    Preheat oven to 350 degrees. Remove ribs from the grill, wrap
    them in plastic wrap, then in foil, and cook ribs in the oven for an
    additional 11/2 hours. Remove from oven and serve with barbecue sauce
    if desired.

    Makes 4-6 servings.
