    Make sure that the griddle and the grill are treated with a nonstick oil based spray ( i.e.: PAM) before cooking begins.

    List of Ingredients




    # 4 Large baked potatoes peeled
    # 1 red pepper finely diced
    # 3tbsp. of olive oil
    # ½ white onion chopped
    # 2 garlic cloves chopped
    # 1/8 tsp red pepper flakes
    # ½ tsp. salt
    # 1/8 tsp. pepper
    # 2tbsp chopped parsley
    # ¼ cup of grated parmesan cheese.
    # 1 egg
    # ½ cup of Italian style breadcrumbs.

    Recipe



    Shred the potatoes using a hand held grater and place in a large bowl.

    Cook the peppers and the onions in the olive oil on medium heat until the onions are soft and translucent, about 5 minutes. Add the garlic , cook one more minute stirring well.

    Add this mixture to the potatoes in the bowl.

    Add the rest of the ingredients and mix well.

    Shape the mixture in round pancakes about 4 inches in diameter and ½ inch thick. Cook on the Hot cast iron skillet for about 2minutes per side, or until brown. Then serve.
