    -- 2 sides good quality pork spareribs, about 6 pounds
    -- 1/4 scant cup soy sauce, for rubbing
    -- 1 to 2 teaspoons sesame oil
    -- Season with seasoning salt
    For sauce:
    -- 2 cups K.C. Masterpiece Original BBQ sauce
    -- 1/2 cup vinegar
    -- 3 tablespoons Tabasco sauce
    -- 1/4 cup fresh flat-leaf parsley, chopped
    -- Equipment: charcoal grill and small handful of wet hickory chips

    Prepare charcoal grill. When coals are covered with a light ash, push them to both sides of grill. Open grill vents.

    Pat ribs dry and rub lightly with soy sauce and sesame oil on both sides. Lightly season with seasoning salt. Place small handful of wet hickory chips on the coals to lightly smoke the ribs. Place ribs on grill rack; do not place ribs directly over heat. Meanwhile, prepare the sauce. In a medium mixing bowl, whisk together barbecue sauce, vinegar and Tabasco sauce. Stir in parsley. Cook the ribs for 11/2 to 2 hours or until meat pulls away from bones. Turn every 20 to 30 minutes. During the last 30 minutes of cooking time, brush ribs with the prepared sauce. Makes 6 servings.
