    Feasty Red Eye "Business End" Chicken

    1 4-5 lb. Whole Chicken
    1 12 oz. Can of Beer
    1 6 oz. can V-8 Juice
    1 clove Garlic, peeled and crushed
    1 tsp. Onion Powder
    1 tsp. Celery Salt
    1 tsp. Horseradish
    1 cup Butter
    Old Bay Seasoning

    Recipe



    Preheat grill for medium heat.
    Remove chicken from packaging; remove innards from cavity and wash. Set aside.
    In a medium sized bowl, combine 6 oz. of beer, 3 oz. of tomato juice, garlic, onion powder, celery salt and horseradish.

    Mix thoroughly. Discard the remainder of beer in can (that means drink it....Duh!) and return "Red Eye" mixture to the empty beer can.

    Rub outside of the cleaned chicken w/ butter and liberally sprinkle w/ Old Bay
    Seasoning.
    Gently insert the 3/4 full beer can into "that part of the chicken that goes over the fence last" and position so that outstreched legs form a "tripod" w/ the beer can.

    Place chicken on grill atop a 10" pie pan (to catch all the drippings).
    Place 1/2 cup of water or beer in the pie pan once the bird is situated on the grill.
    Roast chicken until meat thermometer inserted into breast reaches 170 degrees.
    Remove from heat and allow to cool before attempting to remove beer can from chicken's "business end"....

    (Careful! The can will be extremely hot and often still contains hot liquid!)
