    5lb side or back ribs 2.2 kg
    3 tbsp black peppercorns 45 mL
    1 tbsp red pepper flakes 15 mL
    6 bay leaves 6
    2 tbsp dried thyme leaves 25 mL

    Recipe



    Place ribs with peppercorns, pepper flakes, bay leaves, and thyme in a large pot; cover with water. Bring to a boil reduce heat, and simmer, uncovered, 45 minutes. Remove from water, drain, and cool. Ribs can be kept, covered and refrigerated, for up to 3 days. Grill over medium low, basting frequently with your favourite barbecue sauce for last 15 minutes of cooking.

    Serves 4-6.
