    ...With Grilled Pineapple Slices

    List of Ingredients




    1 (1 to 1½-pound(s) fully-cooked smoked ham slice, cut about ½ to ¾-inch thick
    Glaze

    1 cup orange marmalade or pineapple preserves or reduced-calorie/sugar marmalade or preserves, or ½ cup of each
    ¼ cup orange juice
    ¼ cup honey or the equivalent in artificial sweetener
    ½ to 1 teaspoon freshly grated orange peel
    ¼ teaspoon ground ginger
    Pinch of salt


    8 slices fresh pineapple or 8 slices canned pineapple in-its-own-juice, drained

    Recipe



    Arrange ham slice on a grill rack set at the highest level of a charcoal grill over slow coals (very ash gray and glowing) or gas grill set at the low to medium cooking setting. Grill about 8 minutes; while ham slice is grilling, combine all of the glaze ingredients, blending well. Turn (over) ham slice and liberally brush with glaze. Arrange pineapple slices on grill rack; liberally brush each with glaze. Continue grilling ham slice and pineapple slices for about 3 minutes. Turn (over) ham and pineapple slices and brush each liberally with glaze; continue grilling until ham slice and pineapple slices are lightly browned and heated through . Be careful not to burn ham or pineapple. Both ham slice and pineapple slices may be broiled, about 6 to 8 inches from heat source, for a total of 10 to 15 minutes. Brush ham and pineapple slices with glaze as previously directed. To serve, cut ham with a sharp knife into four serving pieces; arrange a serving piece of ham on each plate and top each with two grilled pineapple slices. Garnish as desired.

    Variations:

    Omit ham slice; use 4 boneless or bone-in pork chops, each cut about ½ to ¾-inch thick. Grill and brush with glaze as previously directed. Grilling time should be about the same amount of time, depending upon the thickness of the chops.
    Omit pineapple and pineapple preserves; use peeled firm ripe fresh peach or pear halves or drained canned in-its-own juice peach or pear halves and peach or pear preserves.
