    List of Ingredients




    4 large cloves garlic, thinly sliced
    2 tablespoons finely grated ginger
    1/2 cup fresh lime juice, or to taste
    Salt and freshly ground black pepper to taste
    1 pound skirt steak
    1/2 cup hoisin sauce
    2 tablespoons ketchup
    32 bamboo skewers, soaked in warm water for 20 minutes
    Nonstick cooking spray
    Lime wedges for garnish

    Recipe



    1. Heat a charcoal grill. In a shallow glass dish, combine the
    garlic,
    ginger, and 1/4 cup lime juice. Season marinade with salt and
    pepper.
    2. Holding a knife at a 45-degree angle, cut the steak crosswise
    into 1/4-inch-thick slices. Add to the marinade and toss to coat
    well.
    Let marinate at room temperature for 10 minutes.
    3. In a small bowl whisk the hoisin sauce and ketchup. Season to
    taste
    with the remaining lime juice, salt, and pepper.
    4. Drain the skewers. Weave a skewer lengthwise through each slice
    of
    steak, stretching the slice on the skewer to flatten it.
    Transfer
    sates to a plate and season with salt and pepper.
    5. Spray the grill with nonstick cooking spray. Grill the sates
    about 5
    to 6 inches over glowing coals for 30 seconds to 1 minute on
    each side
    for medium-rare. Transfer to a platter and serve hoisin sauce
    and lime
    wedges alongside.
