8 boneless chicken thighs
¼ cup fresh lemon juice
8-ounce container plain low-fat yogurt
3 cloves garlic, minced
2 tablespoons vegetable oil
2 teaspoons ground cumin
1½ teaspoons chili powder
1½ teaspoons minced peeled fresh ginger
1 teaspoon paprika
1 teaspoon salt
½ teaspoon turmeric
Recipe
Combine all the ingredients except the chicken thighs, and blend well. Pour over chicken, cover tightly, and refrigerate until 30 minutes before you are ready to grill.
Grill chicken for 10 minutes per side. Serve with Mango Salsa (recipe follows) and basmati rice.
Mango Salsa
1 ripe mango, peeled and coarsely chopped
1/4 cup fresh lime juice
1 large clove garlic
2 tablespoons finely chopped red pepper
1 finely chopped fresh jalapeno (optional)
1 teaspoon salt, or to taste
2 tablespoons finely chopped fresh cilantro
Combine all ingredients.
