CREMAT (SPANISH FLAMING COFFEE)

8 ozs. Spanish brandy, warmed
12 ozs. dark rum
3 Tbsps. sugar
Peel of 1 lemon, thinly sliced
3 5-inch cinnamon sticks
4 cups strong hot coffeeRecipe
In a flame-proof 4- to 6-quart bowl, combine all ingredients except the coffee. Stir, then carefully ignite the mixture, holding a long match near the surface (do not immerse the match). Stir with a long spoon while adding the coffee. When the flame is extinguished, ladle into cups. Recipes adapted from The Joy of Cooking.
