1 / 2 oz. Lemon Bacardi
1/2 oz. lemon juice
1 tsp powdered sugar
1 oz. Farimont 75th Anniversary Brut (to top off)

To prepare the Fairmont 75, lie the glass with the Lemon Bacardi. Shake all ingredients except for the Fairmont 75 Anniversary Brut champagne. Strain contents into a martini glass and top with the Fairmont 75th Champagne. Garnish with a lemon twist.
HISTORY OF THIS WARTIME LIBATION
The French 75 owes its origins to the Allied soldiers deep in the trenches during World War I. The drink of choice amongst soldiers was gin. However, “dutch courage” was scarce and legislation against the liquor hindered its consumption. Both cognac and champagne, on the other hand, were in steady and cheap supply. Canadian soldiers found that mixing the two together produced a similar effect to being hit by the artillery piece known as the French 75.
The city of Toronto, including the city’s landmark hotel, The Royal York, was effected by the Great Wars in Europe. During the wartime years, the hotel became one of the chief entertainment centres in the city. The formal black dinner jacket was replaced by uniform during countless supper dances in the Imperial Room. Whether the French 75 was exported to the hotel by Allied troops is not certain, but The Fairmont Royal York has taken this classic 20s cocktail and filled it up to the rim with 75 years of memories. Hence the newly dubbed Fairmont 75.
The Fairmont 75 will be served in The Library Bar, and EPIC Fine Restaurant, on the lobby level of The Fairmont Royal York, York Station Bar located on the MM Level, and in Pipers Bar and Grill on the Avenues Level. The cost of the Fairmont 75 is $11.00
