Toffee Apple Cocktail

List of Ingredients
1 cups sugar
1 cup water
4 Granny Smith apples, peeled and cored and diced
30ml white rum
30ml apple schnapps
15ml butterscotch schnapps
1 cup of ice
Recipe
To caramelise the apples, place sugar and water in a saucepan. Cook, stirring, over low heat until sugar dissolves. Bring to the boil. Simmer until golden. Add apples and simmer for a further 5 minutes. Remove from heat and cool.
(for decoration, make another toffee, without adding the apple. Pour onto greaseproof paper in a pretty design. Let it set and peel off to place in drink)
To a blender add rum, both the schnapps, ice and 2 tablespoons of the caramelised apples. Blend and serve in cocktail glasses with toffee decoration.
