1 1/2 cups white cornmeal
1 1/2 cups biscuit mix
1 1/2 teaspoons baking powder
2 tablespoons sugar
1 teaspoon salt
2 eggs, lightly beaten
1 3/4 cups milk
1/4 cup oil
Recipe
Mix the cornmeal, biscuit mix, baking powder,
sugar, and salt in a medium bowl. Add the
eggs and milk. Heat the oil in a 7 x 11-inch
pan until very hot and add half of the oil
to the cornbread mixture. Pour the batter
into the prepared pan. Bake at 425 degrees
for 25 minutes. Yields 12 servings.
