    125g butter
    3 Earl Grey teabags, made up with 300ml boiling water. Remove the tea bags after one minute.
    150g sultanas
    125g caster sugar
    1 orange, zest and juice
    275g self raising flour
    1 level 5ml spoon bicarbonate of soda
    ½ level 5ml spoon salt
    1 level 5ml spoon mixed spice

    Preheat the oven to 180°C, 350°F, Gas Mark 4.

    Grease and line the base of a 1kg loaf tin.

    Place the butter, tea, sultanas, caster sugar and zest and juice of an orange into a saucepan. Bring to the boil and simmer for 4 minutes. Allow to cool.

    Mix together the flour, bicarbonate of soda, salt and mixed spice, then pour in the tea. Thoroughly combine before pouring into the loaf tin.

    Bake in the oven for 1 hour. Leave in the tin for 10 minutes to cool, then turn out on to a rack.
