* 10 medium-size green tomatoes
* Boiling water
* Ice water
* 2/3 cup raisins
* 2/3 cup vegetable shortening
* 2 1/2 to 2 2/3 cups granulated sugar, to taste
* 4 large eggs
* Walnuts or pecans, coarsely chopped, to taste (optional)
* 3 1/2 cups all-purpose flour
* 2 teaspoons baking soda
* 1 teaspoon ground cinnamon
* 1 teaspoon salt
* 1/2 teaspoon baking powder
* 1/4 teaspoon ground allspice or nutmegRecipe
Peel and core the green tomatoes after plunging them first into boiling water, then into an icy bath. Discard the seeds, then blend the pulp until smooth. You will need 2 cups.
Grease two 9- by 5-inch loaf pans. Heat the oven to 350 degrees.
Soak the raisins in 2/3 cup boiling water and set aside to cool.
Cream the vegetable shortening with the sugar until fluffy. (The amount of sugar will depend upon how tart the tomatoes are.) Beat in the eggs thoroughly, add the tomato pulp and the undrained plumped raisins. If desired, add walnuts or pecans; mix well.
Sift together the flour, baking soda, cinnamon, salt, baking powder and allspice. Add gradually to the tomato mixture. Turn into the prepared pans and bake for 70 minutes.
Makes 2 loaves.
