List of Ingredients
grated rind of an orange
juice of an orange
boiling water
2 tbsp (25 ml) butter, room temperature
1 cup (250 ml) sugar
1 egg
2 cups (500ml) flour
¼ tsp (1 ml) salt
1 tsp (5 ml) baking powder
1 tsp (5 ml) baking soda
1 cup (250 ml) mincemeat
½ cup (125 ml) chopped nuts
Recipe
Preheat the oven to 350°F (180 °C). Place rind and orange juice in a 1 cup measure and fill to the brim with boiling water. Cream the butter, beat in the sugar and egg until light and fluffy. Alternately add the orange mixture and the dry ingredients, mixing well. Stir in mincemeat and nuts. Bake in a well greased loaf pan for 50-60 minutes or until the top springs back when touched or a skewer inserted into the middle of the loaf comes out clean. Makes: 1 loaf * bake in 4 small loaf pans for 45 minutes or until done.
