TOPPING-OF-THE-MORNING BREAKFAST BREAD

List of Ingredients
2 cups all-purpose flour
2 1/2 teaspoons baking powder
1 teaspoon salt
1 cup sugar
1 egg, lightly beaten
3/4 cup milk
1 tablespoon orange rind, grated
1/4 cup orange juice
1 teaspoon vanilla
1/4 cup butter, melted
1/4 cup shortening, melted
Topping (see below)
Recipe
In large mixing bowl, sift together flour, baking powder, salt and sugar. Make a well in center and add rest of ingredients, mixing well until blended. Grease only the bottom of 13-by-9-inch pan and pour in batter evenly; spoon topping evenly over batter. Bake at 400 degrees 30 to 40 minutes.
TOPPING
2 1/2 cups (3 medium) apples, peeled and grated
1 tablespoon orange juice
1/4 cup brown sugar, firmly packed
1 teaspoon cinnamon
10 maraschino cherries, drained and chopped
2 tablespoons butter, melted
To make topping:
In small mixing bowl, combine all ingredients and mix well.
