1 1/2 cups all purpose flour
1 cup quick cooking rolled oats (not instant)
1 cup sugar
2 tsp. baking powder
2 tsp. cinnamon
1/2 tsp. salt
1/4 tsp. ground nutmeg
1/3 cup shredded coconut
1/3 cup chopped walnuts
1/2 cup evaporated 2% milk
1/2 fat free egg substitute, or 2 whole eggs
1/3 cup unsweetened applesauce
2 Tbsp. canola oil
2 tsp. vanilla
2 cups peeled, grated apples
1/2 cup grated carrotsRecipe
Preheat oven to 350 degrees. Spray 9x5 inch loaf pan with non-stick cooking spray. Ina large mixing bowl, combine flour, oats, sugar, baking powder, cinnamon, salt and nutmeg. Add the cocnut and walnuts. Mix well.
In another bowl, whisk together evaporated milk, egg substitute, applesauce, oil and vanilla. Stir in the apples and carrots.
Add all the wet ingredients to the dry ingredients. Mix just until dry ingredients are moistened.
Pour the batter into the loaf pan. Spread batter evenly.
Bake 55-60 minutes, or until a toothpick inserted in center of the loaf comes out clean.
Cool for 10 minutes in the pan and remove the bread to a wire rack to cool completely.
Cover with plastic wrap and store in refrigerator. makes 1 loaf, 12 slices.
