3-1/4 cups self-rising flour
1 cup sugar
1/2 teaspoon cinnamon
2 tablespoons vegetable shortening
2 eggs
3/4 cup milk
Vegetable oil

Beat 1-1/2 cups flour and all remaining ingredients except oil in a large mixing bowl at low speed for about 30 seconds, constantly scraping bowl. Now beat on medium speed for 2 minutes. Stir in remaining flour and turn dough onto well-floured bread sheet. Lightly coat dough with flour and gently roll until about 3/8 inch thick. Cut with doughnut cutter, flouring cutter between cuts. Heat 3 inches vegetable oil in a deep fryer or large kettle to 375 F. Gently slide doughnuts into hot oil with wide spatula. Turn doughnuts over when they rise to the top. Remove when golden brown. Drain on paper towels. For a tasty treat, gently shake doughnuts one at a time in bags of powdered sugar, granulated sugar with cinnamon, or drizzle melted chocolate on top.
