CALIFORNIA FRENCH TOAST

2 large eggs
2 Tbsp. (30 mL) orange juice concentrate
1/2 tsp. (2 mL) cinnamon
1 tsp. (5 mL) liquid honey
1 tsp. (5 mL) vanilla
1 cup (250 mL) milk
8 slices French bread
1 Tbsp. (15 mL) canola oil
Slice kiwi fruit and strawberries for garnish
Recipe
Add the eggs, orange juice concentrate, cinnamon, honey, vanilla and milk to a blender. Process on high for about 5 seconds or until smooth. Pour into a shallow glass dish.
Heat a large, non-stick skillet to medium-high. Add 1 tsp. (5 mL) canola oil.
Dip 2 to 3 bread slices into liquid and allow to soak for one minute. Place into the pan and cook for about 3 minutes per side or until nicely golden. Remove from pan and arrange onto serving plates. Repeat until all the toast is cooked. Garnish with sliced kiwi fruit and strawberries and serve immediately
Serves 4.
