Eggs in the Hole

1 egg
2 tsp butter or margarine
1 sliced white or whole wheat bread (the regular kind)Recipe
Butter bread generously on one side. Using a 2-1/2 inch (6 cm) round cookie cutter or an upturned glass about the same diameter, cut a hole in the middle of the slice of bread. Eat the middle immediately or save it for later. Whatever.
Lay the holey bread slice in a small frying pan, buttered side down, and cook over medium heat until just lightly golden on the bottom. Remove it from the pan with a spatula. Now add 2 tsps. (10 mL) of butter or margarine to the pan, spread it around as it melts. Flip the bread over and return the it to the pan, uncooked side down. Immediately break an egg into the hole. It should just fit without too much leakage out the sides or top. Try not to break the yolk.
Let the egg cook over low heat until the white has just turned opaque - about 2 minutes. Slide the spatula underneath, and flip the egg-in-the-hole over to cook the top for just a minute.
