Late Breakfast Sausage Taco

List of Ingredients
8 pork sausages
30 ml (2tbsp) oil
150 g (5oz) new potatoes, boiled and thickly sliced
1 green chilli, finely chopped
4 spring onions, chopped
25 g (1oz) unsalted butter
60 ml (4tbsp) double cream
3 eggs, beaten
4 flour tortillas
50 g (2oz) Cheddar cheese, grated
Salt and black pepper
Recipe
Heat half the oil in a large frying pan until hot, add the sausages and cook for 10-12 minutes, turning frequently until thoroughly cooked. Remove, cut sausages into 3 pieces and keep warm. Add remaining oil to the pan, raise the heat and saute the potatoes for 5-8 minutes until golden, turning them frequently. Add the chilli, spring onions, seasoning and sausages. Toss together and keep warm. In a pan, bring the butter and cream to the boil, add the eggs, season and cook gently until you have fluffy scrambled eggs. Heat the tortillas in a dry frying pan over a medium heat for 5-10 seconds on each side. Divide the sausage potato mix and egg between the tortillas, sprinkle over the cheese and roll up the tortillas.
Serving Suggestion:
Serve topped with a little of your favourite Mexican-style tomato salsa or alternatively serve with grilled breakfast mushrooms and chunky tomato wedges.
