Wake up your taste buds by serving this colorful melange with sausages or bacon and eggs; or serve it alone, with buttered whole wheat toast or warm flour tortillas for impromptu breakfast burritos. For convenience, potatoes can be cooked the night before, wrapped in a tea towel and refrigerated.
List of Ingredients
2 medium red-skinned potatoes (about 8 ounces total)
1 (1 pound) bag Mann’s Broccoli Cole Slaw
1 large onion, chopped
1 large red or green bell pepper, cut into 1/2-inch squares
Salt and freshly ground pepper
Vegetable oil for cooking
Recipe
1. Scrub the potatoes clean and cut into a 1/2-inch dice. In a medium saucepan, cover potato cubes with cold salted water and bring to a boil over high heat. Cook until the potatoes are tender when pierced with the tip of a sharp knife, 5 to 7 minutes. Drain in a colander.
2. In a large bowl, toss together the potatoes, broccoli cole slaw, onion and bell pepper. On an oiled griddle or in a large skillet, working in batches if necessary, spread a single layer of the potato and broccoli mixture on the hot griddle, pressing down gently with the back of a spatula. Season with salt and pepper to taste. Cook, turning once, until golden on both sides, 2 to 3 minutes total. Serve warm.
