Montrachet, Turkey and Asparagus Omelet

List of Ingredients
1/4 cup turkey, diced
4 eggs
1/8 cup onions, diced
1/8 cup asparagus, blanched and diced
1/4 cup portobello mushrooms
1/8 cup red and yellow peppers, roasted
1/4 cup Montrachet cheese
Butter as needed
Salt and pepper to tasteRecipe
Heat skillet and melt butter. Add onions, asparagus, mushrooms, turkey and roasted peppers to pan. Sauté until onions and mushrooms are tender. Whip eggs well and add to skillet. Cook over medium heat until egg is no longer runny. Add cheese, salt and pepper. Fold omelet in half and serve with mashed potato home fries (See recipe below).
Mashed Potato Home Fries
Ingredients:
1 cup mashed potatoes
1/4 cup onions, diced and sautéed until brown
1 jalapeño pepper, diced and sautéed
1/4 cup green onions, diced
Pinch cumin
Pinch chili powder
1/4 tsp. garlic, minced and sautéed
Salt and fresh ground pepper to taste
Instructions:
Sauté onions, peppers and garlic in a little butter until tender. Add green onions, chili powder, cumin, salt and pepper. Let cool and mix into leftover mashed potatoes. By hand, form mashed potato cakes. Brown cakes in a skillet until golden on both sides.
