2 cups frozen hash browns
1 cup fully cooked ham, chopped
1/2 cup chopped onion
2 tablespoons vegetable oil
6 eggs
salt and pepper to taste
1 cup shredded cheddar cheese
Recipe
In skillet, sauté potatoes, ham and onion in oil for 10 to 15 minutes or until potatoes are tender. In a bowl, beat the eggs, salt and pepper. Add to skillet, stir and cook until eggs are set. Stir in the cheese and serve.
