6 large cored, peeled and sliced cooking apples - for example Catshead, Grenadier, Peasgood Nonsuch or Tom Putt
120 grms soft brown sugar
1 tsp ground cinnamon
30 grms melted butter
60 grms raisins soaked in 3tbs King Offa Cider Brandy
60 grms sliced Kumquats

Recipe



Combine all the ingredients in a large pie dish, cover with shortcrust pastry and bake in a moderate oven until golden brown. Serve with Blackberry Sauce and Herefordshire clotted cream.
