Apple and Saffron Soup

1 medium diced onion
1 tbs oil
500 grams cored and diced dessert apples - for example James Grieve
2 medium-sized peeled and diced potatoes
small piece fresh root ginger
1/2 litre chicken or vegetable stock
1/4 litre Herefordshire apple iuice - for example Warner's King
6 strands saffronRecipe
Fry onions in the oil until light golden brown. Add all other ingredients, bring to the boil, reduce heat and simmer until the potatoes are tender. Puree, gently reheat and serve with a swirl of Herefordshire cream or yoghurt.
