    List of Ingredients




    1 small onion
    1 bay leaf
    1 clove
    300ml (half pint) scalded milk
    85g (3 oz) fresh white breadcrumbs
    freshly grated nutmeg
    salt and ground white pepper
    40g (1 and a half oz) unsalted butter
    2 tablespoons double cream

    Recipe



    Spike the onion with the bay leaf and clove. Infuse in the hot scalded milk for 30 minutes before adding the fresh white breadcrumbs.

    Simmer over a low heat for 15 minutes, stirring regularly, before removing the onion, clove and bay leaf.

    Add a grating of nutmeg, salt and ground white pepper with the unsalted butter and double cream.

    Serve hot, don't make in advance.

    Serves 2-4.
