Corner of gammon - 1.75 kg (4 lb), soaked overnight
Cloves - 2 whole
Black peppercorns - 4
Brown sugar - 1 tsp
TOPPING:
Butter - 25g (1 oz)
Brown sugar - 50g (2 oz)
Ground cinnamon - pinch
Irish whiskey - 1 tbsp, such as Bushmill's
Guinness - 150 ml (¼ pint), or other stout
Recipe
Strain the soaked gammon and scrape the outer skin, then put into a large saucepan and barely cover with cold water, adding the cloves, peppercorns and sugar. Bring to the boil, remove any scum, then reduce to a simmer. over and cook for 1½ hours.
Remove the gammon. Cool slightly but do not let it get cold. Peel off the skin.
To make the topping, mix the butter, brown sugar, cinnamon and whiskey together well. Score the top of the gammon fat with a diamond pattern and press the topping on to it firmly.
Lift on to a heatproof dish and pour the Guinness or stout around.
Preheat oven to 190 °C / 375 °F / Gas 5.
Bake in the oven for about 30 minutes until the topping is crisp and golden. Serve hot or cold.
