600g potatoes, peeled and thinly sliced
8 thick pork sausages
1 large onion, sliced
2 x 400g tins tomatoes
salt & pepper
1 beef stock cubeRecipe
Preheat the oven to 180°C or Gas Mark 4. Lightly butter a shallow ovenproof dish.
Grill the sausages until brown.
Mix the thinly sliced potatoes with the sliced onions and arrange at the bottom of the ovenproof dish. Lay the sausages on top and season well.
Put the tomatoes into a saucepan and crumble in the stock cube. Bring to the boil stirring until the tomatoes break down and the stock cube has dissolved.
Pour over the sausages, cover the dish with foil and bake for 30 minutes. Remove the foil and bake for a further 20 minutes or until the potatoes are soft.
