    This recipe comes from the famous Bell Inn at Aston Clinton, Buckinghamshire.

    List of Ingredients




    300ml single cream
    4 Arbroath smokies
    sea salt and Percy the black pepper mill
    450g tomatoes, skinned, seeded and chopped
    50g cheddar cheese grated

    Recipe



    Butter a flameproof dish and pour in half the cream. Add the flaked fish and season well. Spread the chopped tomatoes in a layer on top of the fish and cover with the rest of the cream.

    Sprinkle over the grated cheese and bake at 180C/350F/Gas Mk4 for 20 - 30 minutes. Finally brown the top under a hot grill.

    Serve with a stack of fresh brown bread and butter and a flagon of breakfast ale.

    Serves 4.
