Recipe Introduction
The County of Berkshire is the home of the Black Berkshire breed of pig.
Serves 4
List of Ingredients
4 pork chops, wiped and trimmed ½ pint white wine or pork stock
1oz butter 8 button onions, peeled
1 tablespoon oil 4oz mushrooms, wiped and sliced
2 sprigs parsley, 1 sprig thyme, 1 sage leaf and a bay leaf – tied together with string 1 tablespoon flour
¼ pint single cream
Parsley sprigs for garnish Salt and black pepper
Recipe
Heat the butter and oil together in a pan, then add the pork chops and brown lightly on both sides.
Remove the chops, add the onions and cook gently until golden.
Add the wine or stock and bouquet garni and return the chops to the pan.
Bring to the boil, then cover and simmer gently for 45 mins to 1 hour.
Add the mushrooms and cook for a further 10 mins.
Blend the flour with a little of the cream.
Remove the pan from the heat and stir in the flour mixture.
Bring back to the boil and boil for 1 minute.
Stir in the remainder of the cream and the seasoning and heat through, but do not allow to boil.
Remove the bouquet garni and serve with a garnish of parsley sprigs.
