Bramley Apple and Pepper Soup

List of Ingredients
• 350g (12oz) Bramley apples, peeled, cored and sliced
• Two red peppers, deseeded and chopped
• One onion, chopped
• Four plum tomatoes, quartered
• Two garlic cloves, peeled
• Two tablespoons of olive oil
• 600ml (1pt) tomato juice1. Preheat the grill to high. Place the Bramley apples, peppers, onion, tomatoes and garlic in a large roasting tin, drizzle with the oil and toss well until coated.
2. Cook for 10-15 minutes, stirring occasionally until the ingredients are charred.
3. Transfer the roast fruit and vegetables to a food processor and blend until smooth.
4. Add the tomato juice and around 150ml (0¼ pt) water and blend again until smooth.
5. Push through a nylon sieve and place in a pan, bringing gently to the boil. Divide into six servings and eat piping hot.Recipe
