300ml milk
1 small onion, chopped
2 cloves
½ x 5ml spoon ground mace
1 bay leaf
salt and cayenne pepper
60g fresh breadcrumbs
60g butter
Recipe
First infuse the milk. Put it in a saucepan with the onions, cloves, mace, bayleaf, salt and cayenne pepper. Bring to the boil and then remove from the heat, cover and leave for 15 minutes. Strain, return to the pan and bring to the boil.
Add the breadcrumbs and cook over a medium heat, stirring constantly, until the milk is absorbed, this takes 1-2 minutes. The sauce should be quite thick but not so stiff that the spoon stands up in it. Stir in the butter, remove from heat and taste for seasoning.
Serve warm, not hot. Bread sauce can be kept warm up to 30 minutes in a water bath, but it becomes pasty on standing too long. If necessary thin it with a little more milk before serving.
Makes 300 ml.
