You can cook the bacon for this recipe in the microwave instead of grilling it.
List of Ingredients
Full fat soft cheese - 175g (6 oz)
Spring onions - 6, chopped
Bacon - 4 rashers, crisply grilled and chopped
Wholegrain mustard - 1 tbsp
Bread mix - 1 x 283g (10 oz) packet
Milk - 200 ml (7 fl oz)
Egg - 1, beaten
Cheddar cheese - 15g (½ oz), grated
Recipe
In a bowl, mix the soft cheese with the spring onions, bacon pieces and mustard. Place the bread mix in a bowl, heat the milk until hand hot and stir in to make a soft dough. Knead on a lightly floured surface for 5 minutes until smooth and elastic.
Roll out to a rectangle 30 x 23 cm (12 x 9 inches) spread over the cheese mixture and roll up like a Swiss roll from the longest edge. Cut into 9 thick slices and arrange in a greased 18 cm (7 inch) square tin. Cover with oiled polythene and leave in a warm place for 30 minutes until doubled in size.
Brush with egg, sprinkle with cheese and bake at 220 °C / 425 °F / Gas 7 for 25 minutes.
