Cheesy Onion and Pancetta Bake

List of Ingredients
2 tbsp Olive Oil
450g / 1 lb Red Onions, peeled and quartered
8 Shallots, peeled
8 Button Onions, peeled
2 tbsp Balsamic Vinegar
1 tsp Brown Sugar
1 tbsp Chopped Thyme
Salt and freshly ground black pepper
3 Plum Tomatoes, sliced 7
6 Basil leaves, torn into shreds
70g Pancetta, cut into strips
125g / 6 oz Butlers Farmhouse Double Gloucester Cheese, grated
Recipe
Heat the oil in a large frying pan and add all the onions and shallots and cook for 12 0 15 minutes until they start to soften
Blend together the vinegar, sugar, thyme and seasoning and pour over the onions mixing well, then transfer to an oven proof dish
Arrange the sliced tomatoes and pancetta on top
Sprinkle over basil and cheese
Bake in a pre-heated oven 190c, 375f, Gas mark 5 for 25 - 30 minutes until golden and bubbling.
Serves 4.
