    Chicken with Creamy Courgette & Lime

    Stuffing:
    75g/ 3 oz courgette
    75g/ 3 oz medium fat soft cheese
    finely grated zest 1 lime
    30ml/ 2 tbsp fresh breadcrumbs
    salt and ground black pepper
    2kg/4½ lb. oven ready British chicken
    oil for brushing
    225g/ 8 oz courgettes
    25g/ 1 oz butter

    Set oven at 190oC/ 395oF/ Gas Mark 5
    To make the stuffing, trim and coarsely grate
    the courgette and mix with the cheese, lime
    zest, breadcrumbs, salt and pepper.
    Carefully ease the skin away from the breast of
    the chicken with the fingertips, taking care not
    to split it. Push the courgette stuffing under
    the skin, to cover the breast evenly.
    Place in a baking tin, brush lightly with oil and
    roast in the oven for 20 minutes per 450g/ 1 lb
    plus 20 minutes, or until the chicken juices run
    clear.
    Meanwhile, trim the remaining courgettes and
    cut into long, thin strips with a potato peeler or
    sharp knife. Sauté in the butter and lime juice
    until just tender, then serve with the chicken.
    Garnish with lime slices and shreds of lime
    zest.

    Serves 6.
