A nice Scottish soup.
List of Ingredients
Vegetable stock - 2¼ litres (4 pints)
Pak choi - 1, chopped
Turnip - 1, diced
Cabbage - 1, chopped
Potato - 1, diced
Onions - 2, diced
Carrots - 2, diced
Red pepper - 1, diced
Yellow pepper - 1, diced
Garlic - 1 tsp, crushed
Salt and freshly ground black pepper
Recipe
Place half the vegetable stock in a large pan then bring to the boil.
Add one third of the vegetables and cook for ten minutes until tender.
Remove the vegetables with a slotted spoon and liquidise with a little of the stock.
Return the purée to the pan and add the remaining stock.
Bring to the boil then add the remaining vegetables and garlic
Bring back to the boil then reduce to a simmer and cook for 45 minutes, season to taste
Serves 8-10.
